Awesome cooking class with quality locally sourced ingredients, clear and thorough instruction and tasty communally-enjoyed results. The best of all worlds! Thanks for teaching us the basics of Italian cooking, Jason!

Best cooking classes I've ever taken. My husband and I learned so much and had a great time cooking with the most beautiful, freshest ingredients you can imagine. We couldn't believe how delicious everything turned out. Jason is a phenomenal teacher. We learned so much about how things like wine, cheese and cured meats are made in the tradition of the region and that was every bit as interesting as the process of combining the ingredients into very tasty treats. Jason does a great job of explaining why we do things a certain way so you remember and can apply it to your cooking at home. He also does a great job of keeping a balance of instruction and fun. We've already made dinner for friends at home from the recipes we learned with stellar reviews. Ashley is the most accommodating host as well and will make you feel right at home in their kitchen. How cool is it to cook an authentic Italian meal in a 600 year old farmhouse kitchen?? If you are even considering taking a class, stop considering and just do it!

Jason Bartner and his wife Ashley offer a half day, full day or five day cooking school at their award winning agriturismo inn: La Tavola Marche. It is at the cooking school where the full meaning of agriturismo, a working farm, unfolds: you will cook with perfect seasonal ingredients just pulled from the farm's gardens and when the recipes call for ingredients not grown on the farm they are culled from local producers. It is foodie heaven! We, 6 friends, booked the full day course, some with trepidation worried that their cooking skills would be lacking. No worries. Jason took the novice starting with no knife skills along with the more experienced cooks and together by the end of the morning we had cooked and eaten lunch, and by our 8:00PM dinner we had cooked a five course meal. Along the way we learned not just how to prepare the recipes but also something about the mystery of how to cook. If you have always cooked tied to a recipe Jason will, in a few shorts hours, both teach you and give you a context within which to work with whatever ingredients you might have on hand. I know it works because I have been back home for a week and have already cooked three meals without opening a recipe! The morning of our class was slated for fresh pasta and we were all a little nervous. After all, isn't it really hard to make fresh pasta? We learned about flours, worked with just laid eggs, and leaned how to marry the two, how to knead them, what the subtleties of touch were, how to feel the ingredients as we worked them together, the mysteries of the pasta machine for rolling out the dough, on and on. We made ravioli filled with roasted pumpkin and sheep's milk ricotta and ate them for lunch with salad and garlic bread. After a nap we started on dinner. We made duck ragu, and learned how to hand cut pasta for tagliatelle, we stuffed lemons with buffalo mozzarella, we made carpaccio of veal with arugula, shards of parmesan and a luxury of black truffles. It was truffle season when we were there and the ones we used had just been snuffled out. We made a main course dish of baked pork chops, crusted with paper thin potatoes, hiding tomatoes, white wine and rosemary. Last but by no means least, pears poached in red wine which were later served with a dollop of whipped cream, the wine reduced to a gorgeous rich red just sweet syrup and pooling under the pears.
WOW! Did we really cook all of that? What a day we had. We drank wine, we laughed, we learned more than we thought possible and we dined splendidly on what we had prepared. Jason and Ashley make all of this happen seamlessly and apparently effortlessly. Don't be fooled: it was a carefully choreographed dance honed and perfected from the many classes they have taught. This is no get a recipe print out when you show up, stand in front of the chef while he demonstrates cooking class. Instead it is a remarkable hands on opportunity to open the book on regional Italian cuisine, and be confident that you can reproduce it once back home.
Do it if you love to cook, do it if you would like to cook and do it if you are afraid you will never be a cook. I only hope I can go back someday for more. Unquestionably five stars. I can recommend it unreservedly.

We stayed with Jason and Ashley for 12 days and would be hard pressed to identify anything we would change. We had planned our visit for nearly 2 years and were a bit nervous about the villa - especially since we had invited several friends from around the US to visit while we were there. We and our guests were richly rewarded with the experience at La Tavola.
The villa is off the beaten path, but was a feature that interested us from the beginning. Once you arrive at La Tavola you will quickly come to appreciate the location and the spectacular scenery. The accommodations are as good as or better than you will find at most hotels in Europe or the States. These are apartments – not rooms – and are accordingly comfortable and well appointed. The food is substantially better than you will find almost anywhere. (I travel extensively and the quality dining experience at La Tavola would be difficult to exaggerate.)
That combined with the enthusiasm with which both Jason and Ashley accommodate guests is a rare circumstance. If a peaceful, high quality Italian country experience is what you are after, it is unlikely you will find one more rewarding than that at La Tavola.
(Bring a sweater/jacket - even in August - for the sometimes cool mountain evenings.)
We will be back.

At first I was skeptical about taking an Italian Cooking Class from an American, but I quickly saw the naiveté of my pre-judgement. Jason knows his s**t and is enthusiastic and fun to watch. He is not condescending to those of us that can't even boil water. It was a great great cooking class, and we got to keep the leftovers upstairs in our fridge in our room for dinner the next evening after our market tour. Ashley and Jason are a well-oiled machine (not in an impersonal way). I loved the way when we were done with one thing and went to the other room to do something on the stove, our stations were cleaned up from what we had just done, and set up with all the things we needed for the next thing. The class inspired my teenaged son to make dinner when we got home to America (although I am not holding my breath for that!)....

We spent 12 hours cooking, eating, chatting with European fellow foodies and learning some helpful cooking tips. Ashley and Jason are quite a good team and the whole experience was memorable. When in Le Marche, it's a MUST for anyone who loves to cook!

La Tavola Marche is a great place to unwind and just enjoy the beautiful Italian countryside. My friend and I had an incredible weekend! Ashley and Jason are fabulous hosts that really made our stay special. We also took two cooking classes. Jason is an excellent chef and teacher. We learned how to make different types of pasta, sauces and homemade sausage. The classes are small so you are able to get hands on attention from the chef and really learn how to properly make the dish.
Our vacation included hunting for mushrooms in the woods on their property, attending a truffle festival and meeting wonderful people from all over the world! This was a perfect weekend getaway! I highly recommend visiting La Tavola Marche and I can't wait to go back!

Its true what they say, Italian food should be shared with great friends and wine - and this cooking class certainly accomplished this. We had only met that morning, but by the afternoon we felt we were celebrating our acheivements with friends.
The easy recipes ensured that even a true novice (like myself) could get involved, yet the end result looked worthy of an Italian restaurant. I cannot wait to host a dinner party and show off the new skills to friends!
Due to circumstances, I had to take my 9 month old with me to the class and Ashley and Jason were lovely about the uninvited little member-I think Lucinda was quite taken with Jason!
This was a lovely way to spend the day and highly recommended for those in Le Marche - actually a must do!
The accommodation looked lovely as well and had we not already booked we would definitely have stayed there.

Jason is outstanding and we had no language issues which made learning much faster and easier. There were three of us in an afternnon class and so it was a culinary and cooking delght. We picked the vegetables ourselves and from there went through each individual dish - we only got time to cover the basics but we all learn't valuable skills and techniques from a guy who is clearly a master of his profession. But I need to tell you about the all singing and all dancing Ashley - a great complement to our hard work in the kitchen. A great couple and an excellent way to spend hours, a day; maybe more.

Four of us from Maryland did a half day class at La Tavola as part of our excursion to central Italy. What a delightful experience! Great food, great wine and most importantly, great hosts and teachers. Ashley and Jason were most welcoming. We had almost as much fun preparing our meal as consuming it. Would return any time.
