Wonderful experience, great food - surpassed all expectations

We had an amazing two week Italian holiday (Rome, Elba, and a week in Tuscany) and our cooking class with Silvia Baracchi (Michelin starred chef) was absolutely the highlight. We ate lunch at Locanda del Molino (Il Falconiere's sister inn/restaurant "in the country" - up a different valley towards Umbria) and asked about cooking class for 6 (4 adults plus 10 y.o and 7 y.o.) and from step one we received a very personal, special service. Silvia was already coming to LDM, so she introduced herself, asked what we liked, what we hoped for and any restrictions. We wanted the kids to fully participate, plus the 7 y.o. has an egg allergy. Silvia was all over it.

Several days later we arrived at Il Falconiere at the appointed time and really felt like special guests (even though we weren't staying at I.F.), like family. The class was conducted in a beautiful old but well appointed kitchen. Very warm and inviting (versus some sterile, classroom/surgical suite like cooking schools I've been to).

The dishes we prepared were interesting, very Tuscan, not too difficult nor too basic, and unbelievably tasty. We made stuffed tomatoes (reversed caprese), pici pasta (hand rolled), stuffed pork medallions, and summer fruit tiramisu. Amazing wine from their winery was served throughout the class.

Silvia was so great with both kids and adults. We're good cooks and we learned a ton - not just Tuscan food things, but pro-chef tricks that we'll apply to lots of dishes. Our kids loved Silvia.

And then...they cooked all the food we had prepared and served it to us in the main Il Falconiere dining patio with full top notch service (we would have dressed up a bit more if we had known that was the culmination).

I really can't say enough good things about this cooking class. We've taken some great cooking classes (including another great one in Chianti) and this outshines them all.

It is not everyday that we are able to take a cooking class in Tuscany. Add to that a property like Il Falconiere and Michelin Starred chef Silvia Baracchi, how could you go wrong? The cooking class had a of expectations to live up to, and it did.

We arrived well before our class. Given our experience with directions in Italy, we did not want to be late. Once we were settled and had met our fellow foodie chefs for the day, we were escorted to the cooking school kitchen. Everything looked exactly like the pictures. It was like an old Tuscan kitchen. We were quickly given aprons we got to keep as well as a welcome glass or wine, or so I thought. It would be one of many as throughout the class the wine poured and poured.

We made various dishes. From prosciutto rolled in eggplant and mozzarella (a truly easy dish) to Pici Pasta with tomatoes and Basil and Beef tenderloin it was a very good experience. The highlight was making pici was it. I had always thought pasta had eggs and flour. Little did I know one could make it from just water and flour. Different in taste and texture, it was shaped entirely by hand. It was fun and true Italian cuisine. They took the prep of everything we did to the main kitchen and then prepared it for us as dinner in the main dining room for the restaurant.

From my understanding the class menus change daily. Given we have experience in the kitchen it would have been great to take other classes or perhaps ask for more advanced dishes. Silvia does a great job in presenting menus that are easy for all levels and for everyone. She gets great credit for that. By the same token, she got a Michelin star for a reason. I would have love more time to spend with her and learn more advanced techniques. Maybe something they can offer for former culinary professionals.

I would highly recommend this not as a class, but as an experience. If you can stay at the property, then you have no excuse to not take as many courses as you can. Buon Appetito!!
