Imagine this: indulging in fresh, warm ricotta, made right before our eyes, with aged balsamic vinegar (produced at the location you're in) drizzled on top as Alessandro shared fascinating details about the region's culinary heritage. Each stop brought us face-to-face with passionate producers, learning the processes and the stories behind their products.
Back home now, I find myself looking at food with a new appreciation, especially those native to Emilia-Romagna. I now actively seek out DOP and IGP labels, understanding the quality and origin they represent.
